Black Bean & Corn Salsa
Ingredients:
2 cups drained canned black beans
2 cups frozen or fresh corn, (if using frozen corn thaw before adding)
1/2 cup fresh cilantro
6 Tbsp olive oil
6 Tbsp lime juice (about 3 limes)
1/4 cup minced red onion
1/4 cup minced scallions
1-1/2 tsp ground cumin
1/2 cup chopped tomatoes
Directions:
Mix all ingredients together, except for the tomatoes. Season to taste with salt and pepper. Cover and refrigerate until cold. Just before serving, add the tomatoes and mix well.
Comments: A make ahead dish. This salsa is also great as a summer salad.
